Cash is legal tender and refusing to accept could result in people taking your goods without owing you a penny.
Any establishment can ask to be paid in whatever form they wish, they can ask for buttons if they wanted to. However if you offer them cash and refuse the debt is considered paid as cash is the only legal tender. They can refuse what they like but doing so could result in someone taking their services or goods and walking out with them. The establishment will have no recourse in a court of law as legal tender was offered and refused. This is clearly stated in both Bills of Exchange act and on the bank of england website under what is legal tender.
One person did do this at a supermarket, he had £45 worth of goods, went to pay by cash and was refused, he left his name and address and told them to call the police and sue him for it. He walked out with the good and never heard a thing. A second person offered cash for a 3 course meal, the restaurant wouldn't take their money so police were called, the police told the restaurant that the person was paying in cash, either accept the money or let them have it free as no crime is being committed. No court in the land would take on a case like this as there is no dispute. There is a debt to be settled and it has been offered payment and refused therefore the debt is settled.
